Personally I think it's realistic for players to make mistakes occasionally, there will be a small percentage that a top player drops an open pass. Kelce droppped a couple in the playoffs noticeably. It has to be factored in as a probability when making a video game surely.

Now circumstances can make you think it's unfair etc and I think there is a lot of confirmation bias.

I prefer to look at the rough and the smooth. Some games things will go my way and other times it won't. Sometimes I would say it even works in reverse. Like when you are behind you get stuff bad that happens. So I just don't buy it.
